I'm a big fan of energy balls, they can satisfy your sweet craving in an instant and leave you feeling full enough not to want to eat a thousand more :) However, if you're like me and are trying to balance hormones then you know balancing your blood sugar levels plays an important role in this. Dates are a common ingredient in bliss balls and although they are a natural sugar and I would recommend them above artificial sweeteners any day, they can still turn this snack into a blood sugar booster.
So that is why I created this recipe, all the goodness yet balanced, satisfying and DATE -free!
2 tsp pea protein (can sub for another protein powder of choice)
2 Tbs ground flax seeds (I recommend grinding them just before making the recipe as pre-ground flax powders can go rancid)
4 Tbs Chia Seeds
5 Tbs roughly chopped puffed rice
1 Tbs Maca powder
1 Tbs Mesquite powder
1 Tbs pumpkin seeds
1/2 tsp vanilla extract or powder
4 Tbs melted coconut oil
1/4 cup spring water
1/2 Tbs honey (optional)
Desiccated coconut for rolling
Grind flax seeds and roughly chop pumpkin seeds and puffed rice. Put these items into a bowl
Add the remaining ingredients except the water and mix together pushing the mixture down with the back of a spoon. Add the water and mix together.
The mixture should start to come together like a dough, add more chia seeds and a little more water if mixture not sticking together. You can also add honey to help bind the mixture.
Scoop out of bowl and roll into balls. Cover and roll balls in desiccated coconut.
Store in fridge
