Gluten Free & Good For You Banana Loaf

This yummy banana load is gluten free and sugar free, which makes this treat a truly healthy afternoon snack. Only 5 minutes to whip up. Serve with macadamia nut butter and a sprinkle of salt or smother in peanut butter and honey for a sweet treat.

 

 

Ingredients:

1 cup Cassava flour (can sub for Almond flour or a GF flour mix)

1 tsp cinnamon

Sprinkle nutmeg

Pinch sea salt 

2 organic eggs

2 Tbs tahini or nut butter of choice

2 Tbs extra virgin olive oil

1/4 cup spring water

1 over ripe mashed banana

2 Tbs raw honey (optional)

 

Method:

Heat oven to 180 C

Grease a loaf tin or muffin tray

Add the dry ingredients to a mixing bowl and mix

Add the wet ingredients to a separate bowl and whisk together. Pour the wet ingredients into the dry bowl and mix together well. The texture should be similar to cake batter

Pour into cake tin and bake for 20-30 mins

Allow to cool and serve with nut butter and a sprinkle of sea salt.

Can be stored in the fridge
