Coconut Cacao Bites

 

Ingredients:

1 cup desiccated coconut 

1/2 cup almond flour (I used the leftover pulp from my almond nut milk, which I dried out in the oven and ground up in a coffee grinder for a smoother texture)

1/4 cup dates (soaked in boiling water for 10 minutes)

2 Tbs cacao powder

2-3 Tbs virgin coconut oil, melted

2 Tbs almond milk/ water

 

Method:

Preheat oven to 180 C and line a baking tray with baking paper

In a large bowl add all ingredients except for the dates and mix well

Remove dates from boiling water and cut up into fine pieces

Add to mixture and mix well. I recommend using your hands and kneading the mixture like you would dough

Mixture should be sticking together, if too dry add more dates and if too wet, add more almond flour

Use a spoon or ice cream spoon to make round balls. I used chocolate moulds and pressed the mixture into the moulds

Leave in fridge for 15 mins.

You can decide now if you would like to bake them or not - personally I think they taste just as good raw but if you would like to bake them then remove from moulds gently by inserting the tip of a knife into the edge of the mould and gently pushing up to remove from mould

Place on baking sheet and bake for 10 mins

Store in an airtight container

 

For the Carob Drizzle:

Melt 3 Tbs coconut oil with 1 Tbs carob powder. Add more carob or nut butter if mixture too runny.
