Pumpkin Seed and Fig Protein Biscuits

3 Tbs Coconut Oil

1/3 cup Mesquite and Lucuma mixed

1 chia "egg" (Mix 1 tbs Chia seeds to 3 Tbs water and leave for 5 mins. Chia seeds swell and form a gel like texture)

3 Tbs Nut Butter of choice

1 tsp Vanilla Powder

1/4 cup Pea Protein (can sub for protein of choice)

1/2 tsp Aliminium- free baking powder

1/4 cup chopped fried figs and pumpkin seeds



Preheat oven to 180 and line a baking tray with wax paper

Melt coconut oil and add to food processor with lucuma and mesquite. Blend together.

Add chia "egg", nut butter, vanilla and blend again

Add the remaining ingredients and mix together well. Mixture should start to stick together and form a dough ball

Remove mixture from food processor and roll into balls. Flatten and sahpe into biscuits

Bake for 20-40 mins (keep an eye on them until they appear to be baked through)


Can be eaten as raw dough balls too :)
