Teff porridge has literally saved my sanity and my gut health :) I was struggling for quick and simple breakfast options to make before I had to leave for work and my smoothies just weren't cutting it. They were far too cold, especially now it's winter, and my gut just wasn't happy trying to digest a cold drink no matter how great it tasted.
Teff is a grain from Ethiopia and contains 20% protein. I add my pea protein powder to the porridge to up my protein level for the day and to make sure I'm not starving again after 2 hours . Teff grain is also high in Vit B1 which is great for thyroid and mental function.
It has a nutty flavour and aroma once toasted and has become my favourite go to breakfast. I pre-make it tfor he week ahead and just heat it up in the mornings on the stove before I leave for work.
1 cup teff grain (not flour)
3 cups spring water
2 Tbs Coconut Oil
1 tsp ground cloves
1 tsp cinnamon
1 tsp vanilla extract/ powder
1/4 tsp himalayn salt
In a medium size pot toast the teff, stirring frequently, for about 4 mins or until it starts to pop. You'll know it's toasted when you can smell the nutty aroma.
Take the pot off the heat and add the water, coconut oil, cloves, cinnamon, vanilla powder and salt. Stir in.
Return the pot to the stove and bring to a boil.
Reduce heat to low, cover, and cook for 10 mins, stiring occassinally. The mixture should be a porridge consistency. If it is too watery, leave on stove for a bit longer.
Spoon into bowls and top with banana, pumpkin seeds, blueberries and other toppings of your choice.
Can keep in the fridge for just less than a week. Just before work I heat up half to a full cup on the stove with a splash of boiling water. I mix in a heaped tsp of my pea protein powder. I then spoon into a small jar., add pumpkin seeds and blueberries or banana.and eat as soon as I get to work or before if time allows.
