Lemon & Coconut Protein Energy Balls

High protein snack balls for you to enjoy. The combination of lemon and coconut is oh so delicious and maca powder is a natural energy booster.

Store in the fridge and eat whenever you need a boost or a nourishing treat.

 

 

Ingredients: **makes 10 balls

1/2 cup Gluten free oats (can sub for normal oats)

1/2 cup pitted dates (soaked in boiling water for 10 mins)

1/4 cup vanilla pea protein powder (can sub for protein powder of choice)

1 heaped tsp Maca powder

pinch salt

juice of 1/2 lemon

3 Tbs spring water

4 Tbs desiccated coconut

 

Method:

Blend oats so they are ground into a powder and pour into a mixing bowl or food processor

Add protein powder, salt, maca and desiccated coconut to bowl and mix together

Drain dates from excess water and add to the dry mixture with lemon juice and water

Mix together well until the mixture starts to come together in one sticky ball

If mixture still too dry add some extra soaked dates and if too wet then add more oat flour

Roll mixture into balls and store in fridge
